Avocado Matzo “Toast” with Pickled Radishes and Carrots
With Passover upon us, I knew many were quite worried about giving up avocado toast for a week, and I’m telling you that you don’t have to! Mazel tov!
I lightly toasted the matzo, which stands up to avocado, doesn’t get super soggy and tastes amazing. You can top mashed avocado with anything, but I love a the acidity of pickled veggies.
I used Streit’s Matzo. There are egg and gluten free versions available. The original Streit’s factory was close to where I lived in NYC. It was sold in 2015 for a cool $30MM.
