
Serves 4
WHAT YOU NEED
- 1 Cup Riced Cauliflower
- 3/4 cup veggie stock or water
- 1/2 cup macadamia nuts, toasted and rough chopped
- 1/4 cup parsley, minced
- 1/4 cup dried apricots, quartered
HOW YOU MAKE IT
- In a small sauce pot, add cauliflower and stock. Bring to a boil, reduce to a simmer and cover
- Simmer for 7-10 minutes, or until all the liquid has cooked out
- Add cooked cauliflower to a medium bowl and let cool for about 5 minutes
- Add parsley, macadamia nuts and apricots with a pinch of salt. Stir to combine
