Cauliflower Pilaf with Parsley, Toasted Macadamia Nuts and Dried Apricots

Serves 4


  • 1 Cup Riced Cauliflower
  • 3/4 cup veggie stock or water
  • 1/2 cup macadamia nuts, toasted and rough chopped
  • 1/4 cup parsley, minced
  • 1/4 cup dried apricots, quartered


  1. In a small sauce pot, add cauliflower and stock. Bring to a boil, reduce to a simmer and cover
  2. Simmer for 7-10 minutes, or until all the liquid has cooked out
  3. Add cooked cauliflower to a medium bowl and let cool for about 5 minutes
  4. Add parsley, macadamia nuts and apricots with a pinch of salt. Stir to combine
