I had some leftover cilantro mint sauce and what better way to use it than over a refreshing 5 ingredient coleslaw? I can’t think of one, so that’s what I did. While cilantro is a polarizing herb, it has a lot going for it including liver cleansing properties and loads of vitamins and minerals.
RECIPE
COLESLAW
- 1 small jicama, skin removed and sliced into matchsticks
- 1 medium/large carrot, matchstick
- 1 medium mango, medium dice
- 3 large radishes, matchstick
- 1 green onion, sliced thinly on the bias, reserve a few greens for garnish
CILANTRO MINT SAUCE
- 1 cup cilantro leaves, minced
- 1 cup mint leaves, minced
- 1 small jalapeno, small diced
- 1 small shallot or ¼ small onion, diced
- 1” piece of ginger, skin removed, minced
- 1 medium clove garlic, minced
- 2 tbsp lemon juice
- 1 ½ tsp. Honey, agave, maple or date syrup
- 1 tsp cumin
- 1 tsp salt
- ¼ cup water or veggie stock
- Cut all ingredients for coleslaw and place it in a medium bowl
- Place all sauce ingredients in a blender except water/stock
- Start to blend and pour water/stock in while blender is going
- Blend until smooth
- Pour over coleslaw, stir to ensure everything is coated
