Ginger Basil Fried Rice – Nobody Puts Basil in a Corner

Do you struggle with using basil in other dishes besides pesto or caprese salad? Don’t get me wrong, I adore both, but this nutrient dense herb has a variety of uses and transcends regional cuisines. Nobody puts basil in a corner!

We are blessed with a plethora of basil and I’ve been hard at work crafting dishes using this anti-inflammatory, mood boosting herb.

Enter Ginger Basil Fried Rice, which uses a bit of basil and some leftover rice. If you make your rice the same day, you can achieve that leftover quality by toasting it in the oven on a sheet pan at 350F for 10 mins and letting it cool. Or if you feel brave, cook the rice in the morning, transfer to a sheet pan, let it cool a bit and then put it in the fridge uncovered until you’re ready to use it. I like to cook my rice in veggie stock. This gives another layer of flavor plus it adds more vitamins and minerals (aka nutrient density).

🍚3 med-lg eggs-beaten 

🍚2 cups rice, cooked (cold, leftover, use veggie stock to amp up nutrient density)

🍚8 mini portobello/button mushrooms, inc stems- large dice

🍚1 lg carrot-medium dice

🍚2 green onions-whites and greens separated

🍚1 cup spinach (baby kale/mixed greens)

🍚12 med-lg basil leaves-ripped or thinly sliced

🍚2 tbsp tamari, soy or coconut aminos

🍚1 med clove garlic-minced

🍚1 tbsp ginger-minced

🍚1 tbsp coconut oil

🍚1 tbsp butter, ghee or coconut oil

🍚Heat medium saute pan over medium heat

🍚When heated, add butter, ghee or oil and heat

🍚Add eggs,let them cook as an omelet (ie, leave them alone)

🍚When eggs are cooked all the way through, remove eggs from heat/pan onto a cutting board and cut into ½”-1” pieces

🍚Wipe out pan, place back on stove and heat over medium heat

🍚Add 1 tbsp coconut oil and heat

🍚Add onion whites, stir to combine

🍚When whites are translucent, add garlic and ginger, stir to combine.  When heated, they will become fragrant. Add carrots, stir to combine. Saute for about a min or when carrots start to become soft

🍚Add mushrooms, stir to combine and coat with oil

🍚Add spinach,stir & let wilt

🍚Add rice and tamari, stir continuously for 3-4 minutes.  All the rice should be coated

🍚Add egg and stir to combine

🍚Turn off heat and add green onions & basil, reserving a bit for garnish
