Time flies when you’re having fun right?
Hard to believe that 11 years ago today I started culinary school @thenaturalgourmetinstitute. CTP 177!
What was a hobby move turned out to be one of the best experiences. I affectionately call it hippie school.
Little did I know what to expect, what I would learn or be exposed to: New techniques, new people, new ingredients, new experiences, the opportunity to wear ill fitting checked pants and an extraordinarily unflattering double breasted coat, to then be covered by an apron and two side towels. Let’s not even discuss the hats or sexy non-slip shoes. It didn’t quite accentuate the positive. I’d never looked better.
It was mostly plant based (we did one week of animal protein). It’s where I learned that food and mood were connected, diet related illness and how to heal with food and nutrient density. We learned gluten free, sea vegetables, how to decipher food labels, the difference between. grass and grain fed meat, ethical farming practices and we dabbled in Traditional Chinese Medicine and Ayurveda. We had a raw food day in the middle of a NYC November (cold weather+cold food=🤢). We recipe tested chocolate chip cookies all day to the point it took me months to be able to eat one again. Culinary school had never been on my radar. Growing up, I wanted to be a lawyer. I have a degree in US history (which was devoid of black history, but I digress). I even took the LSAT in 2008.
In 6th-8th grades, part of the curriculum was to give a demonstration speech to the class. Each time I’d cut up different colored construction paper to resemble food (sorta), bring a pan and a wooden spoon and had my own 7-minute cooking show. That should have been a clue.
I had no idea how that seemingly short experience of culinary school would so greatly and profoundly impact my life. Time really did fly 7/20/09-12/4/09.
