Have you ever wondered what is a vegetable? In olden days, the word meant living and growing, to give energy to or to enliven. Today, they’re more commonly known as being cultivated for food. I like to think of it as a blend of the two.

Vegetables are edible parts of plants like flowers, stems and roots that we eat to nourish and satiate. They’re nutrient dense and provide us with things like fiber (which helps our digestive system, cholesterol and blood pressure. #NBD), vitamins and minerals like potassium, magnesium, vitamins A and C.

Vegetables are prepared in a variety of ways: sauteed, roasted, raw in salads (read my post about raw foods), boiled and steamed.

Vegetables also come in a variety of colors. You may have heard the term “eat the rainbow.” Each color represents different phytochemicals, which are disease fighting crusaders. Ie – they help your overall health and wellbeing. They’re pretty bad ass.
