Green Beans
When I say green beans, does it conjure up images of a casserole? Do you sit and ponder if green beans are a bean or a veggie? You’re not alone.
They’re low cal, crunchy and are surprisingly nutrient dense. Well, it was a surprise to me. Maybe you knew already that they’re high in vitamins C, K and folate, a B vitamin. Folate’s important for cell growth and metabolism. The string bean also contains silicon which is good for bones, skin and hair. You had me at silicon.
They can be sauted with a bit of garlic, they can be pickled (one of my personal favorites) or they can be the star in a Thanksgiving casserole.
The answer is – they are a veggie! I know you were on the edge of your seat while you were reading this post.
