Nori
Nori is is a paperlike seaweed that is known mostly as that which wraps delicious sushi rolls like a little nutritious blanket. The nori we eat is a red algae that cut and dried for culinary purposes and is a little nutrient dense wonderkind.
Seaweed is a true superfood as it contains protein and good carbs, vitamin A, vitamin C, a decent source of niacin, iron, and zinc. Seaweed really shines with it’s high iodine content. Iodine is critical for your thyroid hormones, healthy metabolism, brain development and function. Mildly important wouldn’t you say?
I love making sushi at home. I just know that it won’t be as pretty as what you’d get by someone who makes it professionally. That’s okay, I’m taking care of myself. This little creation is filled with carrot, avocado, mango, toasted macadamia nuts and sesame seeds. And it’s heaven.
