Raise your hand if you love guacamole!🤚🏼🤚🏼🤚🏼 There is no right way to make it or eat it. Whether you make it at home, have it prepared table side in a restaurant or pile it high a top artisanal toast, there is no question that whichever way you consume avocado, it’s really good for you. In fact, @maxlugavere calls it a genius food given it’s nutrient density. It’s loaded with vitamins and minerals. One avocado has more potassium than a banana, a mineral which many of us are deficient. They’re loaded with good quality fat, which helps brain function amongst other things and fiber, which helps the digestive system. And that’s just scratching the surface.

I served this tasty bowl of goodness with homemade grain free crackers. They need one more round of testing before I’m ready to release the recipe. But here is how I made the guacamole du jour.

🥑2 small/medium avocados
🥑1 small shallot, small dice
🥑1 lime, juiced
🥑1/4 tsp sea salt
🥑3 tbsp cilantro, minced
🥑1/3 cup pistachios, roasted
🥑OPTIONAL:1 tsp reishi powder (I used @ommushrooms)
🥑OPTIONAL: small jalapeno, thinly sliced.  Pickled in rice wine vinegar.

🥑Add avocados to a bowl, mash until slightly chunky. Add onions, lime juice, sea salt (and reishi if using) and mix to combine. Add most of the cilantro and pistachios, reserving a little bit for garnish
