Dark leafy greens, blueberries and sunflower seeds are all good for our eye health. As I’m focused on that today, I wanted a quick and easy salad with a hearty dressing that would fill me up. Enter this bad boy. You can double or even triple the recipe, I made this just for me:)
INGREDIENTS
2 cups Power to the Greens from Trader Joes (you can use whatever salad mix you want, dark leafy greens are the best for eye health)
1/2 cup organic blueberries
1 green onion, sliced on the bias
2 tbsp raw sunflower seeds
2 tbsp organic almond butter (I used Whole Foods)
1 tbsp organic toasted sesame oil (I used Spectrum Foods)
1 tsp coconut aminos, tamari or soy sauce
PROCEDURE
Assemble greens, blueberries, onion and sunflower seeds in a bowl, reserving a few seeds for topping.
In a separate bowl, whisk together almond butter, toasted sesame oil and coconut aminos.
Dress salad. Eat.
