Have you wondered how to get more veggies in your body at breakfast? What about adding mashed sweet potatoes to lightly sweetened overnight oats? Sounds a little weird, but it’s delightful, the sweet potato helps the pancreas out, the oats provide fiber, the coconut milk, chia and walnuts are all good fats. It’s super delicious and will have you feeling full and satiated for quite some time.
1 small sweet potato, steamed and mashed
3/4 cup gluten free oats (I used @onedegree)
2 tbsp. organic chia seeds (I used @nutiva)
1 cup organic, full fat coconut milk (I used @wholefoods)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cardamom
1/4 tsp sea salt
1/4 cup walnuts, rough chop
OPTIONAL
1 tsp maca powder (I used @navitas)
1 tbsp tocos (I used @Sunpotion)
PROCEDURE
Combine oats, chia, coconut milk, spices, salt and maca/tocos (if using) in a bowl. Mix well. Cover and refrigerate overnight.
In the morning, layer (you also don’t even need to get this fancy) the overnight oats, sweet potatoes and walnuts in a jar or cup.
