WHY
It’s finally sunny in LA (for the time being) and I wanted to eat something that reminded me of summer. So I made open faced Pulled BBQ Jackfruit topped with Creamy Crunchy Coleslaw ( I ♥️ alliteration)
Jackfruit shreds much like slow cooked chicken or pork and can absorb many a flavor, making it a versatile protein, fiber and nutrient source for those of us who don’t eat meat. It also is said to be immune boosting, good for vision and supports skin health among many other health benefits. #nutrientdense
The creamy and tangy essentially detox coleslaw is the perfect flavor foil and texture against the sweet bbq jackfruit. I used a carrot, radishes/leaves, a leek, brussel sprouts, hemp seeds. You can use whatever variety of veggies you’d like.
HOW (you’ll make this a reality)
🥗1/4 cup plain non dairy yogurt (I used @kitehillfoods plain greek style)
🥗2 tbsp raw apple cider vinegar (or vinegar of your choice. I used @bragglivefoodproducts)
🥗1 tbsp olive oil
🥗1 tbsp sesame oil (you can use all olive if you’d like)
🥗1 tbsp maple syrup (omit if you want zero sweetener. Just know the dressing will not be balanced)
🥗1/2 tsp pepper
🥗1/2 tsp salt
WHAT (you’ll need to do with the ingredients)
🥗Add all items to a bowl, whisk together. Dress coleslaw or salad.
